Almond Cookies ( Melt-in-the-Mouth )
Suitable for vegetarians as this is no egg in this recipe

Ingredients
  • 600 g plain flour
  • 2 tsp baking powder
  • 1 tsp bicarbonate soda
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 240 g sugar
  • 120 g finely ground almond
  • 50 g crushed almonds optional
  • 300 ml canola oil or any oil except olive oil
Instructions
  1. In a bowl of plain flour, add baking powder
  2. Add bicarbonate soda
  3. Add salt
  4. Mix all the dry ingredients well
  5. Sieve flour mixture into another bowl
  6. Add sugar
  7. Add finely ground almond
  8. Pour canola oil
  9. Mix thoroughly until everything is fully combined
  10. Optional: If you like crunch in the cookies add 30-50g crushed almonds and mix well
  11. Pinch off small portions of the dough
  12. Roll each portions into a ball and arrange on a baking tray lined with parchment paper
  13. Using a fork press gently and make marking on the dough ball
  14. Make another marking across the first ones to get a criss-cross pattern
  15. Bake at 180 degree C for about 15 to 20 mins or until golden brown
  16. Remove cookies from tray and cool them on a cooling rack

You can use any type of oil except Olive Oil
