Ginger Garlic Chicken Wings

Ingredients
  • 4 Tbsp potato starch
  • 6 Tbsp plain flour
  • ¾ Tbsp white pepper
  • 1 tsp chicken powder
  • 250 ml water
  • 12 chicken wings
  • 3 tsp light soya sauce
  • 3 tsp chinese rice wine
  • ½ tsp sesame oil
  • 4 cloves of garlic
  • 1 Tbsp of freshly grated ginger
Instructions
  1. Add 4 Tbsp potato starch, 6 Tbsp plain flour, ¾ Tbsp white pepper and 1 tsp chicken powder into a bowl and mix well
  2. Pour in 250 ml water and stir with a whisk until all the flour dissolves
  3. Wash 12 chicken wings and put in a bowl
  4. Add 3 tsp light soya sauce, 3 tsp chinese rice wine and ½ tsp sesame oil
  5. Press or chop 4 cloves of garlic and 1 Tbsp of freshly grated ginger onto the chicken wings
  6. Mix all the ingredients well and ensure that the chicken wings are thoroughly coated
  7. Pour in the flour mixture and mix well
  8. Set aside in the fridge for at least 2 hrs or overnight
  9. Take out from the fridge and mix the marinated wings well
  10. Ensure the oil is very hot before frying
  11. Carefully lower marinated chicken wing into the hot oil
  12. Fry for about 2 minutes on each side until light brown
  13. Remove the fried wings and set aside before the final fry
  14. Just before serving, fry the wings for 1 to 2 mins in hot oil for a 2nd time
  15. Serve the chicken wings hot
