Add baking soda to plain flour

Add ground ginger and cinnamon powder

Add ground nutmeg and salt

Mix all the dry ingredients well

Add butter to brown sugar and mix until light and creamy

Add vanilla extract and egg yolk to mixture

Add golden syrup to batter and mix well

Add the flour mixture a little at a time

Mix until all come together

Store dough in plastic bags and

keep in the fridge for at least 1 hour

Remove chilled dough from fridge and

place in between 2 baking papers

Roll dough flat about 1/2 cm thick

Cut dough with a ginger bread man cutter

Arrange cut dough on a baking tray

Bake at 180C until edges turn slightly brown (10 – 15 mins)
