Kueh Lopes

This recipe is an easier way to make Kueh Lopes without having to wrap with banana leaves into triangular shape individually. (Makes 32 pieces)

Ingredients
  • 4 rice cooker cups glutinous rice
  • 2 Tbsp alkaline water lye water
  • 4 rice cooker cups water
  • 1 tsp salt
  • 1 Tbsp cooking oil
  • 2 pandan leaves
  • Homemade gula melaka syrup
  • Blue Pea extract optional
Grated coconut
  • 500 g grated coconut
  • 1 tsp salt
  • 3 pandan leaves
Instructions
  1. Wash, rinse glutinous rice and soak in water.
  2. Add alkaline water and mix well.
  3. Set aside for 30 - 60 mins.
  4. Drain out water and transfer rice into a rice cooker pot.
  5. Add water, salt, cooking oil and mix well.
  6. Tie pandan leaves into a knot and place in the pot.
  7. Set to "Glutinous Rice" mode or "Auto" to fully cook the rice.
  8. Fluff up fully cooked rice and remove pandan leaves.
  9. Scoop out some rice and put in a 10 inch round tray lined with banana leaf.
  10. Fill up the tray and compress the rice tightly.
  11. Arrange some pandan leaves on top and steam for 10 - 15 mins.
  12. You can also mix some blue pea extract to the rice for colour (optional).
  13. In the meantime prepare the grated coconut for steaming
  14. Arrange crushed pandan leaves in a pan
  15. Sprinkle salt to the grated coconut and mix well
  16. Pour grated coconut into the pan with pandan leaves
  17. Arrange pandan leaves on top of the grated coconut and steam for 15 mins
  18. Remove grated coconut from the steamer.
  19. Remove pandan leaves
  20. Cut the kueh into bite size pieces and coat each piece with the steamed grated coconut
  21. Cut into 8 triangle shape pieces and coat each piece with the steamed grated coconut.
  22. Drizzle gula melaka syrup over the kueh.
Recipe Notes

You could also simply scoop up the cooked glutinous rice using an ice cream scoop and coat the ball of rice with grated coconut. Then drizzle gula melaka syrup over it. This eliminates the need to flatten the rice and steam it. It would look like steamed tapioca kueh.
