Minced Meat Potato Pie

Ingredients
  • 1 kg Potatoes
  • 50 g scallions spring onions
  • 50 g cilantro parsley
  • 2 large onions
  • 1 large egg
  • 200 g minced pork
  • 100 g minced chicken
  • 1 tsp salt
  • 1 tsp white pepper
Instructions
  1. Boil potatoes until soft, peel skin and mash
  2. Wash and chop scallions and cilantro
  3. Peel, wash and dice large onions
  4. Beat egg in a bowl
  5. Add minced chicken and pork to mashed potatoes
  6. Add 1 tsp salt and 1 tsp white pepper
  7. Mix the minced meat with the mashed potato
  8. Add diced onions, chopped scallions, cilantro and mix thoroughly
  9. Add the beaten egg and mix evenly
  10. Scoop generous amount of meat potato mixture into porcelain ramekins dishes
  11. Put a spoonful of butter or grated cheese on top of the mixture in each ramekin for added flavour (optional)
  12. Arrange them on a baking tray and bake at 180 C for 10 - 15 mins or until top turns golden brown
