Parmesan and Cheddar Cheese Cookies

In this easy-to-follow recipe, I blend the rich, nutty flavor of Parmesan cheese with the sharp, tangy goodness of cheddar to create irresistibly addictive cookies.

Ingredients
  • 500 g self-raising flour
  • 150 g grated cheddar cheese
  • 150 g grated parmesan cheese
  • 300 g unsalted butter
Instructions
  1. Weigh 500g self-raising flour in a bowl
  2. Add a mixture of grated cheddar and parmesan cheese to the flour
  3. Using a wooden spoon mix well until all the cheese is coated with the flour
  4. Add the unsalted butter
  5. Rub butter into the flour with fingertips
  6. Gather the mixture together to form a dough
  7. Line a U shaped cookie mould with baking paper

  8. Take some dough and fill up the lined mould

  9. Press dough tightly and wrap it with the baking paper

  10. Remove the wrapped dough from the mould and chill it in the fridge for at least an hour

  11. Remove dough from fridge, unwrap and slice about ⅛ to ¼ inch thick pieces

  12. Arrange pieces on a baking tray lined with baking paper

  13. Bake in preheated oven at 160C until lightly brown. About 15 to 20 mins for ¼-inch thick cookies. About 10 to 15 mins for ⅛-inch thick cookies

  14. Remove the tray from the oven and cool on a cooling rack
