Black Vinegar Chicken

Ingredients
  • 3 Tbsp minced garlic
  • 3 Tbsp finely chopped ginger
  • 2 finely chopped large onion
  • 250 ml water
  • 2 Tbsp chopped spring onions
  • 5 chicken legs
  • 1 chicken breast
  • 2 Tbsp thick dark soya sauce
  • 4 Tbsp black vinegar
  • 1 Tbsp light soya sauce
  • ½ Tbsp taucheo fermented soybean paste
  • 1 tsp sugar
  • 250 ml water
  • 1 tsp sesame oil
Instructions
  1. Wash and cut 5 chicken legs and 1 chicken breast into small pieces
  2. Add 3 Tbsp minced garlic and 3 Tbsp finely chopped ginger in a wok and stir well
  3. Add 2 finely chopped large onion and stir well
  4. Gradually add 200 ml water and mix well
  5. Add 2 Tbsp chopped spring onions
  6. Add the chicken pieces and mix thoroughly
  7. Add 2 Tbsp thick dark soya sauce, 4 Tbsp black vinegar, 1 Tbsp light soya sauce, ½ Tbsp taucheo
  8. Add 1 tsp sugar and mix everything well
  9. Pour another 250 ml of water and mix well
  10. Finally add 1 tsp sesame oil, mix well and let it simmer until chicken is fully cooked
