Black Vinegar Chicken

It has an intense aroma and flavour and is a widely used condiment in Asian cuisine. This is a simple recipe where the chicken is braised with ginger, garlic, onions and black vinegar bringing the flavour to another level – simply delicious. Ingredients
- 3 Tbsp minced garlic
- 3 Tbsp finely chopped ginger
- 2 finely chopped large onion
- 250 ml water
- 2 Tbsp chopped spring onions
- 5 chicken legs
- 1 chicken breast
- 2 Tbsp thick dark soya sauce
- 4 Tbsp black vinegar
- 1 Tbsp light soya sauce
- ½ Tbsp taucheo fermented soybean paste
- 1 tsp sugar
- 250 ml water
- 1 tsp sesame oil
Instructions

Wash and cut 5 chicken legs and 1 chicken breast into small pieces

Add 3 Tbsp minced garlic and 3 Tbsp finely chopped ginger in a wok and stir well

Add 2 finely chopped large onion and stir well

Gradually add 200 ml water and mix well

Add 2 Tbsp chopped spring onions

Add the chicken pieces and mix thoroughly

Add 2 Tbsp thick dark soya sauce, 4 Tbsp black vinegar, 1 Tbsp light soya sauce, ½ Tbsp taucheo

Add 1 tsp sugar and mix everything well

Pour another 250 ml of water and mix well

Finally add 1 tsp sesame oil, mix well and let it simmer until chicken is fully cooked
