Soft and Fluffy Bread Buns with Red Bean Paste

Ingredients
  • 550 ml warm water at 45 degrees Celcius
  • 20 g instant yeast
  • 50 g sugar
  • 10 g salt
  • 1/4 cup oil
  • 900 g bread flour
  • 660 g red bean paste
  • 1 egg for egg wash
  • sesame seeds
Instructions
  1. Prepare warm water at 45 C in a bowl
  2. Add instant yeast and sugar to the warm water and stir gently
  3. Cover the bowl and set aside until yeast mixture turns foamy which shows that the yeast is active

  4. Add salt and oil and mix well
  5. Add bread flour a batch at a time and mix well
  6. Knead until it forms into a dough
  7. Cover and let it rise until double in size

  8. Punch the dough to release the air
  9. Transfer the dough on a rolling board and cut to size of 42 g each

  10. Scoop out the red bean paste and weigh 22 g each
  11. Flatten dough with a rolling pin and place red bean paste in the centre
  12. Fold the sides up and pinch the dough to seal the red bean paste
  13. Gently roll into a ball with your hands and arrange on a baking tray
  14. Set aside the tray in a warm place for at least 45 mins for the shaped dough to rise
  15. After the dough have double in size, brush with egg wash and sprinkle sesame seeds on top

  16. Bake at 180 C for 20 mins or until golden brown
