Soft and Fluffy Bread Buns with Red Bean Paste

Ingredients

  • 550 ml warm water at 45 degrees Celcius
  • 20 g instant yeast
  • 50 g sugar
  • 10 g salt
  • 1/4 cup oil
  • 900 g bread flour
  • 660 g red bean paste
  • 1 egg for egg wash
  • sesame seeds

Instructions

  • Prepare warm water at 45 C in a bowl
  • Add instant yeast and sugar to the warm water and stir gently
  • Cover the bowl and set aside until yeast mixture turns foamy which shows that the yeast is active
  • Add salt and oil and mix well
  • Add bread flour a batch at a time and mix well
  • Knead until it forms into a dough
  • Cover and let it rise until double in size
  • Punch the dough to release the air
  • Transfer the dough on a rolling board and cut to size of 42 g each
  • Scoop out the red bean paste and weigh 22 g each
  • Flatten dough with a rolling pin and place red bean paste in the centre
  • Fold the sides up and pinch the dough to seal the red bean paste
  • Gently roll into a ball with your hands and arrange on a baking tray
  • Set aside the tray in a warm place for at least 45 mins for the shaped dough to rise
  • After the dough have double in size, brush with egg wash and sprinkle sesame seeds on top
  • Bake at 180 C for 20 mins or until golden brown
