Coconut Candy with Gula Melaka (Palm Sugar)
How many of you remember when was the last time you ate these yummy coconut candy treats. Back in the 60s, these coconut candies were very popular. My mum used to make these candies when I was a young boy but it seems harder to buy them as the years go by. Nowadays you can hardly find them in the shops. Today I want to bring back the old days by sharing this easy-to-make coconut candy recipe for all to enjoy.
There are 2 versions, the first one with food colouring and the the second version without artificial colouring. The addition of gula melaka enhances the flavour and makes the candies more shiok!

- 1 drop of red colouring
- 120 g condensed milk
- 2 tsp vanilla extract
- 45 g grated gula melaka palm sugar
- 4 crushed pandan leaves
- 500 g grated coconut
- 90 g sugar
- 1/2 tsp salt
- oil for brushing 6″ x 9″ Glass Container
- 90 g grated gula melaka palm sugar
- 45 g sugar
- 1/2 tsp salt
- 500 g grated coconut
- 4 crushed pandan leaves
- 120 g condensed milk
- oil for brushing 6″ x 9″ Glass Container

Add a drop of red colouring to a bowl of condensed milk and mix well

Add vanilla extract and mix well

Grate gula melaka (palm sugar)

Add crushed pandan leaves to grated coconut in a frying pan

Stir fry gently over low heat (about 5 mins)

Add grated gula melaka, salt and sugar to grated coconut and mix well

Pour the red coloured condensed milk a little at a time and mix well

Fry until colour is evenly distributed (about 20 mins)

Remove all the pandan leaves

Grease a 6″ x 9″ glass tray

Transfer the cooked grated coconut into the glass tray and spread evenly

Compress the grated coconut

Chill in the fridge overnight

Remove from fridge and cut into cubes

Grate gula melaka (palm sugar)

Add gula melaka, salt and sugar to grated coconut and crushed pandan leaves

Pour condensed milk and mix well
-
Fry until all ingredients are evenly distributed (about 20 mins)

Transfer cooked grated coconut to an oiled glass tray and spread evenly
-
Compress and chill in the fridge overnight

Remove from fridge and cut into cubes
