Instant Pot Duo Plus Mutton Curry
Mutton curry usually takes about 2 hours of cooking over medium heat for the meat to be soft, tender and fall off the bone. Cooking with my Instant Pot Duo Plus, an Electric Pressure Multi-Use Programmable Cooker, can reduce the cooking time to only 30 minutes of pressure cooking. The result is a fall off the bone tender mutton in a rich curry gravy.

- 3 -4 Tbsp cooking oil
- 2 stalks curry leaves
- 2 stalks lemongrass
- 1 kg mutton with bone cut into large chunks *
- 250 g coconut milk
- 300 – 400 ml water to cover meat
- 3 tsp tomato paste
- 1 – 2 tsp sugar to taste
- 1 tsp salt to taste
- 4 red / green chilli
- 400 g big onions
- 6 pcs dried chilli
- 45 g garlic
- 45 g ginger
- 6 cm fresh turmeric or 1 Tbsp turmeric powder **

Add big onions, dried chilli, garlic, turmeric and ginger into a blender.

Blend into a fine paste.

Select “Saute” function.

Pour spice paste into the pot and saute with cooking oil.

Fry until spice paste is cooked.

Add curry leaves and lemongrass and stir fry.

Add cut mutton meat with bone and mix thoroughly.

Pour in coconut milk and water.

Mix thoroughly and close lid

Select “Pressure Cook” function and set to 25 mins.

After plunger pops up, the timer will count down from 25 mins to 0 min.

Quick release pressure and wait for the plunger to drop back.

Unlock the lid and add tomato paste, sugar, salt and cut chillies.

Close back the lid and pressure cook for another 5 mins.

Serve with Pilau Rice.
- *I prefer to use mutton leg for curry as it is lean and tenderises well.
- **The curry tastes better with turmeric powder.
