Aglio e Olio (Linguine Pasta with Salmon)
A classic Aglio e Olio is one of the simplest pasta dishes to make with simple ingredients like spaghetti, olive oil, garlic and crushed red pepper flakes. Aglio e Olio literally means olive oil and garlic in Italian. However my youngest daughter cooks with linguine instead (a flatter version of spaghetti), chilli powder, chopped parsley and salmon for more flavours. You could also add bacon instead of salmon, which is my preferred choice, future video perhaps..

- 4 cloves garlic
- 1 tsp chilli powder
- 1 tsp pepper
- 1 tsp salt
- 3 tsp chopped cilantro
- 4 – 6 Tbsp extra virgin olive oil
- 200 g salmon
- 2 litres water
- 1 Tbsp salt
- 2 Tbsp extra virgin olive oil
- 150 g linguine

Start preparing by slicing garlic thinly, chop cilantro and cut salmon into bite size pieces.

Pour olive oil and add salt to a pot of water and bring it to a rolling boil.

Add the linguine pasta and boil for 8 mins.

Remove linguine from the pot and drain it in a colander.

Keep the pasta water for later use.

Heat up a frying pan and add olive oil.

Add cut salmon and stir fry until cooked and remove from pan.

Add olive oil to the frying pan.

Add sliced garlic, chilli powder, pepper and salt to pan. Stir fry until garlic turns slightly brown

Add the cooked linguine, 3 ladle scoops of pasta water, salmon and toss it well.

Finally add chopped cilantro and mix everything together.

Garnish with grated parmesan cheese and parsley.
