Instant Pot Duo Plus Ginger Chicken with Shaoxing Wine

Ginger chicken with shaoxing wine is one of many chinese confinement foods that is served to women after giving birth. It is believed to help them recuperate better during confinement period. Ginger is also known to be good for expelling wind and improving blood circulation. It is sometimes served with mee sua in a broth but this recipe is gravy based and served with rice. Cooking this dish with my Instant Pot Duo Plus, an Electric Pressure Multi-Use Programmable Cooker, cuts down the cooking time with only 5 minutes of pressure cooking.

Instant Pot Duo Plus Ginger Chicken with Shaoxing Wine

Ingredients
  • 3 – 4 Tbsp sesame oil
  • 170 g old ginger julienne
  • 2 stalks spring onions cut into small pieces
  • 70 g chopped garlic
  • 3 chicken legs and 1 chicken breast cut into pieces
  • 2 Tbsp light soy sauce
  • 1 Tbsp pepper
  • 400 ml shaoxing wine
  • Enough water to almost cover the chicken
  • 2 tsp salt
  • 2 tsp sugar
Instructions
  1. Select “Saute” function.
  2. Pour sesame oil into the pot and heat it up.
  3. Add the julienned ginger and saute for 2 – 3 minutes until lightly browned.
  4. Add bottom portions of cut spring onions, chopped garlic and stir fry briefly.
  5. Add chicken pieces and mix thoroughly.
  6. Pour in light soy sauce, pepper and shaoxing wine.
  7. Add enough water to almost cover the chicken pieces.
  8. Mix thoroughly and add salt and sugar.
  9. Cover and twist the lid to lock.
  10. Press “Cancel” and then select “Pressure Cook” function. Set to 5 minutes.
  11. After plunger pops up, the timer counts down from 5 minutes to 0 minute.
  12. Quick release pressure and wait for the plunger to drop.
  13. Twist lid to unlock and add the rest of the cut spring onions.
  14. Serve with rice.
