Braised Yee Fu Noodles with Straw Mushrooms

A simple yet flavourful noodle dish with just 3 main ingredients besides the sauce. This dish is usually served at Chinese Banquets during the end of a ten course dinner. You can also get them at most Chinese restaurants but they cost quite a lot for a dish.  This meal is mainly made out of the yee fu noodle, straw mushrooms and white chives.

Here I will show you how to cook this deliciously simple meal at home without spending too much but large enough for a medium size family to enjoy.

Braised Yee Fu Noodles with Straw Mushrooms

Ingredients
  • 300 g Yee Fu noodles
  • 200 g white chives
  • 300 g straw mushrooms
  • 2 cloves chopped garlic
  • 1 cup chicken stock
  • 1 cup water
  • 1/2 cup chinese rice wine
  • 2 Tbsp cooking oil
Sauce:
  • 1 Tbsp oyster sauce
  • 2 Tbsp black vinegar
  • 2 Tbsp soy sauce
  • 1/2 Tbsp dark soy sauce
  • 2 tsp rice wine
  • 1/2 tsp sesame oil
  • 1/2 tsp white pepper
Instructions
  1. Mix all the ingredients for the sauce in a bowl
  2. Wash white chives and drain
  3. Cut chives about 3 inches in length
  4. Wash straw mushrooms and cut in half
  5. Blanch dried yee fu noodles for 2 mins in boiling water
  6. Transfer noodles into a colander and drain off excess water
  7. Heat up wok until hot
  8. Add cooking oil
  9. Add chopped garlic and stir fry for about 10 secs
  10. Add straw mushrooms and stir fry until it is evenly coated with the garlic

  11. Pour in the sauce mixture and mix evenly

  12. Add the chicken stock and mix well

  13. Add the cut chives

  14. Add a cup of water and mix evenly

  15. Add 300g blanched yee fu noodles and stir well until noodles are evenly coated with the sauce

  16. Add chinese rice wine &and stir until everything is evenly mixed well

  17. Taste and adjust accordingly
