Agar Agar Jelly with Lychee

This easy recipe is for those who don’t like or cannot take coconut milk. The syrup in the can of lychee is also used to make the agar agar for added flavour. You can also add other kinds of canned fruits for different flavours. A refreshing cooling dessert for that hot sunny weather.

A very simple recipe to make Agar Agar Jelly with Lychee

Ingredients
  • 1 can lychee in syrup
Agar Agar mixture
  • 1 packet agar agar powder 12 g + 100 ml water
  • 6 – 8 pandan leaves crushed
  • 900 ml water
  • Lychee syrup from the can of lychee
  • 100 g sugar to taste
Instructions
Agar Agar mixture
  1. Open a can of lychee and pour out the syrup for later use.
  2. Mix agar agar powder in little water.
  3. Boil crushed pandan leaves in a pot of water.
  4. Add sugar, agar agar mixture and pour in the lychee syrup.
  5. Stir well before bringing to a boil until sugar and agar agar dissolve completely.
  6. Sieve into a pot and remove the pandan leaves.
  7. Cool down hot agar agar mixture (if you are using plastic container)
Assembly
  1. Pour a thin layer of cooled down lychee agar agar mixture in containers.
  2. Set aside until it starts to solidify.
  3. Arrange pieces of lychee on the thin layer.
  4. Scoop the lychee agar agar mixture over the fruits until fully covered.
  5. Set aside to cool and solidify.
  6. Once set and cooled, chill in the refrigerator for a few hours before serving.
Recipe Notes

You can add more lychee in the agar agar if you wish.
