Stir Fry Long Beans
This quick and easy stir fry recipe requires only basic ingredients. I add chopped garlic and ginger to the long beans and stir fry on high heat briefly, resulting in a crunchy and tasty side dish. I usually replace the chopped ginger with “Samsui Ginger Sauce”, which is readily available in supermarkets like NTUC and Cold Storage here in Singapore. This tasty ginger paste is served with steamed chicken and lettuce at the Soup Restaurant and is very popular among the diners. Adding this ginger paste brings a whole new level of flavour to this simple stir fry long beans dish. I do recommend that you try it.
You can also add red chillies, sesame oil, pounded dried shrimps or soy bean paste to enhance the flavour of this dish.

- 2 Tbsp cooking oil
- 2 tsp chopped garlic
- 100 ml water
- 1 heaped tsp ginger paste “Soup Restaurant Samsui Ginger Sauce”
- 200 g long beans wash and cut about 3 ins long

Add cooking oil in a hot frying pan.

Add chopped garlic and saute until lightly browned.

Pour in water, stir and let it boil briefly.

Add ginger paste (For more flavour, use chopped ginger or “Soup Restaurant Samsui Ginger Sauce”.

You can also add red chillies, sesame oil, pounded dried shrimps or soy bean paste at this stage.

Stir and mix everything together well.

Add cut long beans and stir fry over high heat briefly.

Cover the frying pan and let it simmer until the long beans are cooked but slightly crunchy.
