Aglio e Olio (Linguine Pasta with Bacon)

Indulge your taste buds with our savoury twist on the classic Aglio e Olio pasta!

Ingredients
  

  • 2 litres water
  • 1 Tbsp salt
  • 2 Tbsp extra virgin olive oil
  • 150 g linguine pasta
  • 2 – 4 Tbsp extra virgin olive oil
  • 200 g back bacon
  • 3 – 4 cloves garlic, sliced thinly
  • 1 tsp chilli powder (optional)
  • 1 tsp pepper
  • 1 tsp salt
  • 3 tsp chopped cilantro

Instructions
 

  • Start preparing by slicing garlic thinly, chop cilantro and cut bacon strips into bite size pieces.
  • Pour olive oil and add salt to a pot of water and bring it to a rolling boil.
  • Add the linguine pasta and boil for 8 mins.
  • Remove linguine from the pot and drain it in a colander.
  • Keep the pasta water for later use.
  • Heat up a frying pan and add olive oil.
  • Add cut bacon pieces and stir fry until crispy and remove from pan.
  • Add olive oil to the frying pan.
  • Add sliced garlic, chilli powder, pepper and salt to the pan.
  • Add the cooked linguine pasta, 2 – 3 ladle scoops of pasta water and crispy bacon, toss it well.
  • Finally add chopped cilantro and mix everything together.
