Potato Meat Patties on Toast (Roti John)

A very easy to prepare Party Snack. This is my late Dad’s creation which he called it his version of “Roti John”. It is basically make up of 3 main ingredients : Bread, potatoes and minced meat of your choice. It can be made a few days in advance and kept in the refrigerator. Before serving, just pop them in the oven and reheat for a few minutes until bread is crispy again. I still make and chill them in the fridge to satisfy my craving for snacks any time of the day. Also great with coffee or tea or even a quick breakfast before heading for work or school.

Try this simple recipe and you will have ready breakfast and snacks anytime.

Potato Meat Patties on Toast (Roti John)

Ingredients
  • 1 kg Potatoes
  • 50 g scallions spring onions
  • 50 g cilantro parsley
  • 2 large onions
  • 1 large egg
  • 200 g minced pork
  • 100 g minced chicken
  • 1 large French loaf baguette
Instructions
  1. Boil potatoes until soft
  2. Peel skin and mash
  3. Wash and chop scallions
  4. Wash and chop cilantro
  5. Peel, wash and dice large onions
  6. Beat 1 large egg in a bowl
  7. Cut French loaf into 1 inch thick slices
  8. Add minced chicken to mashed potatoes
  9. Add minced pork
  10. Add 1 tsp salt
  11. Add 1 tsp white pepper
  12. Mix minced meat into potato
  13. Add diced onions
  14. Mix in the onions
  15. Add the chopped scallions and cilantro and mix evenly
  16. Add 1 large beaten egg and mix evenly
  17. Spread 1 Tbsp full of potato mixture onto a thick slice of French loaf
  18. Arrange sliced bread on a baking tray
  19. Bake at 180C for 20 mins or until bread turns golden brown
Recipe Notes

Best eaten freshly baked or reheat just before serving. It can be made a few days in advance and kept in the refrigerator. Before serving, just pop them in the oven and reheat for a few minutes until bread is crispy again.
