Roti Babi Panggang Recipe – Thick Sliced French Loaf with Savoury Pork Filling

Roti Babi Panggang is one of those comforting old-school recipes that instantly brings back memories of traditional homemade favourites. Made with thick slices of French loaf instead of regular sandwich bread, this version is filled with a savoury pork mixture and toasted until golden and crisp. The result is a hearty, flavourful sandwich with a satisfying crunch on the outside and a deliciously seasoned filling inside.
It can be made a few days in advance and kept in the refrigerator. Before serving, just pop them in the oven and reheat for a few minutes until bread is crispy again. I still make and chill them in the fridge to satisfy my craving for snacks any time of the day. Also great with coffee or tea or even a quick breakfast before heading for work or school.

Roti Babi Panggang
Ingredients
- 1 kg Potatoes
- 50 g scallions spring onions
- 50 g cilantro parsley
- 2 large onions
- 1 large egg
- 200 g minced pork
- 100 g minced chicken
- 1 large French loaf baguette
Instructions
- Boil potatoes until soft
- Peel skin and mash
- Wash and chop scallions
- Wash and chop cilantro
- Peel, wash and dice large onions
- Beat 1 large egg in a bowl
- Cut French loaf into 1 inch thick slices
- Add minced chicken to mashed potatoes
- Add minced pork
- Add 1 tsp salt
- Add 1 tsp white pepper
- Mix minced meat into potato
- Add diced onions
- Mix in the onions
- Add the chopped scallions and cilantro and mix evenly
- Add 1 large beaten egg and mix evenly
- Spread 1 Tbsp full of potato mixture onto a thick slice of French loaf
- Arrange sliced bread on a baking tray
- Bake at 180C for 20 mins or until bread turns golden brown
