Almond Cookies ( Melt-in-the-Mouth )
Ingredients
- 600 g plain flour
- 2 tsp baking powder
- 1 tsp bicarbonate soda
- 1 tsp salt
- 1 tsp vanilla extract
- 240 g sugar
- 120 g finely ground almond
- 50 g crushed almonds optional
- 300 ml canola oil or any oil except olive oil
Instructions
- In a bowl of plain flour, add baking powder
- Add bicarbonate soda
- Add salt
- Mix all the dry ingredients well
- Sieve flour mixture into another bowl
- Add sugar
- Add finely ground almond
- Pour canola oil
- Mix thoroughly until everything is fully combined
- Optional: If you like crunch in the cookies add 30-50g crushed almonds and mix well
- Pinch off small portions of the dough
- Roll each portions into a ball and arrange on a baking tray lined with parchment paper
- Using a fork press gently and make marking on the dough ball
- Make another marking across the first ones to get a criss-cross pattern
- Bake at 180 degree C for about 15 to 20 mins or until golden brown
- Remove cookies from tray and cool them on a cooling rack
