Ginger Garlic Spinach (Chinese Style)

There are a few ways to cook spinach. In this recipe, I boil the spinach over the stove in quick time. Then I prepare a simple ginger garlic sauce to pour over the boiled spinach. Lots of garlic and ginger are added to enhance the flavour of the sauce. Sharp spinach is used in this simple recipe.

Ginger Garlic Spinach

Sharp spinach is used in this simple recipe

Ingredients
  • 200 g sharp spinach
For Pot of Water
  • 1 tsp salt
  • 1 Tbsp cooking oil
For Sauce
  • 2 Tbsp chopped ginger
  • 2 Tbsp chopped garlic
  • 1 tsp light soy sauce
  • 1 Tbsp oyster sauce
  • 2 Tbsp shaoxing wine
  • 1/2 tsp white pepper
  • 1 tsp sesame oil
  • 80 – 120 ml water
Instructions
  1. Separate spinach leaves from stems.
  2. Snap the stem into 2 ins length and pull off the thin membrane string while doing so. Wash and drain spinach separating the stems from the leaves.
  3. Prepare a pot of boiling water and add salt and cooking oil.
  4. Add the stems and cook for about 20 secs.
  5. Add the leaves and cook for a total of 1 minute.
  6. Remove spinach from the pot and rinse under running water to prevent it from overcooking.
  7. In a hot pan with a little oil, add chopped ginger and garlic and stir fry briefly.
  8. Add light soy sauce, oyster sauce, shaoxing wine, white pepper and mix well.
  9. Add some water and finally add sesame oil.
  10. Switch off the flame.
  11. Place the spinach on a serving plate.
  12. Pour or ladle the ginger garlic sauce over the spinach.
  13. Ready to serve.
Recipe Notes
  1. Adjust seasoning to personal preference.
  2. Goes well with fried ikan bilis for toppings (optional)
