Minced Meat Potato Pie

Ingredients
- 1 kg Potatoes
- 50 g scallions spring onions
- 50 g cilantro parsley
- 2 large onions
- 1 large egg
- 200 g minced pork
- 100 g minced chicken
- 1 tsp salt
- 1 tsp white pepper
Instructions
- Boil potatoes until soft, peel skin and mash
- Wash and chop scallions and cilantro
- Peel, wash and dice large onions
- Beat egg in a bowl
- Add minced chicken and pork to mashed potatoes
- Add 1 tsp salt and 1 tsp white pepper
- Mix the minced meat with the mashed potato
- Add diced onions, chopped scallions, cilantro and mix thoroughly
- Add the beaten egg and mix evenly
- Scoop generous amount of meat potato mixture into porcelain ramekins dishes
- Put a spoonful of butter or grated cheese on top of the mixture in each ramekin for added flavour (optional)
- Arrange them on a baking tray and bake at 180 C for 10 – 15 mins or until top turns golden brown
