Soft and Fragrant Steamed Puteri Ayu Recipe | Easy Pandan Coconut Cupcakes

Makes: 20-24 pieces
- 220 g plain flour
- 220 g sugar
- 250 ml coconut milk
- 3 eggs
- 1 tsp ovalette
- 8 pandan leaves or 1 tsp pandan paste
- 400 g grated coconut
- 1/2 tsp salt
- 2 tsp cornflour
- Wash and cut pandan leaves and put in a blender
- Pour coconut milk into blender and blend until the leaves are fine
- Sieve pandan coconut milk
- Measure out 250 ml pandan coconut milk
- In a mixing bowl, add sugar and eggs, mix well until creamy and fluffy
- Add ovalett to the mixture and continue mixing
- Pour in pandan coconut milk slowly and mix well
- Slowly add flour and mix at low speed until well mixed
- In a tray add salt and cornflour to the grated coconut and mix well
- Put some of the grated coconut into the putu ayu cups and press down firmly
- Pour the batter into the cups over the grated coconut
- Arrange the cups in a steamer and steam for 5 mins over medium heat
- Remove from steamer and squeeze the sides of each cup to loosen the kueh
- Gently tap the kueh out onto a plate
